How to choose the perfect Cava for Christmas

When selecting a Cava, understanding its sweetness levels can help you find the perfect match for your meal. The sweetness depends on the amount of sugar added during production:

  • Brut Nature: No added sugar; only natural residual sugars.
  • Extra Brut: Minimal sugar, slightly sweeter than Brut Nature.
  • Brut: Moderately sweet and versatile.
  • Semi-Seco: The sweetest, best suited for desserts.

Cava’s quality also depends on its maturation period. Basic Cava must mature for at least nine months, while reserva requires a minimum of 15 months, and gran reserva at least 30 months. Longer maturation often enhances complexity and depth of flavour.

Where does Cava come from?

Unlike Champagne, Cava production isn’t limited to one region. However, the Penedès region near Barcelona is the heart of Cava production, accounting for 90% of the world’s supply. The town of Sant Sadurní d’Anoia, in particular, is considered the birthplace of Cava.

Other regions in Spain, including Extremadura, La Rioja, Aragón, and Valencia, also produce Cava, each contributing unique characteristics to the sparkling wine.
